I've only had my bike for a few weeks and I love it! However, I don't like the cheap plastic preload ring on the Ohlins 888 shock. Does anyone know where I can buy a replacement ring? Would a metal preload ring from another Ohlins shock work?

I can get you the Ohlins replacement spring platform (aluminum) for $22 plus shipping ... if its an earlier level shock. I just spoke with the Ohlins rep and he said that they would not be offering anything other than the nylon seat for the new 888 shock.
What he did confirm regarding preload was this - its best to do with the bike on a stand and the rear wheel in the air. Loosen the locking ring, then spin the spring by hand ... the seat should spin with it. Tighten the locking ring in a position where the screw is easy to access and you're good to go. At no point is using a punch on the nylon ring a good idea.
