I'm not British, but live just across the North Sea in Norway.

If you fancy riding in the woods during the darkness in winter, I suggest a helmet lamp in addition to the one on the bike. I use one, powered by a separate battery in my pocket. It really helps. The light on the bike doesn't always shine in the direction you need it.

Well the bikes previous owener removed the lights horn dash and harness along with the duel mapping switch from new as didnt need it for h&h events.
I can sort what connects to what but were do I get power from does the harnes go into the coil / magneto or to the ecu ?. If it as one.

I prefer to get rid of the original loom, especially if it's been chopped around, and make an independent ignition circuit. An independent ignition circuit is much easier to inspect and check for faults if you have a breakdown on the side of the trail. If you just want an unobtrusive light / horn setup for the MOT, there is a good how-to here It doesn't show how the tail / brake light set up, but you should be able to work that out. If you want to ride at night, auxiliary cree leds and helmet lights are the way forward.

Pro Racing do lighting kits. I think his gear is still all Leonelli (same as Gas Gas), so worth a call if you need parts or want someone to do the work for you.
